The first half of this book contains case studies primarily for use during and in support of food safety and food technology training programmes as well as other related subjects. The second half of the book gives answers and solutions to the questions and problems posed in each of the case studies. There are a number of advantages to using these case studies for training purposes: they provoke discussion; emphasise particular issues (used as an exercise during a session); and can also be used to train different groups with differing abilities and objectives. The studies are designed to encourage students to make decisions and then explore the impact and effectiveness of these actions. Students will be able to test out the theories and scientific approaches they have learnt or are learning, as well as getting an insight into the day-to-day work of an environmental health practitioner.
